Lemon Coconut Keto Muffins {Recipe}

These little muffins really ease the psychological side of eating a keto or paleo style diet. There’s something about being able to still enjoy a warm baked good (served with a generous amount of butter, of course) when you are otherwise avoiding most things that we would consider comfort foods. The recipe came from our Keto Coach & Nutritionist, Harry Isaac.

These muffins are high in protein and fat and very low in carbs thanks to the coconut flour. The recipe can be modified too; you could add poppyseeds or berries (depending if you’re aiming for true keto or just paleo or low carb). I’ve also tried making a variation of these zucchini chocolate muffinsย and they were great! I don’t have sukrin or instant coffee in the house so I omitted those, and added a couple tablespoons of flax and a bit more stevia for sweetness.

Lemon Coconut Keto-Friendly Muffins

Makes one muffin tin (for larger muffins, fill 10 of the 12 with batter).

Pre-heat the oven to 350 C; I recommend using paper muffin cups or greasing the muffin tin very well.

Mix the wet ingredients and dry ingredients, then combine. Bake 25-30 minutes and check with a toothpick. Allow muffins to cool

8 eggs

6 tablespoons of lemon juice

1/2 cup melted grass fed butter, ghee, or coconut oil

2/3 cup coconut flour

4 tablespoons ground flax

1/4 tsp salt

1 tsp baking soda

1/2 tsp vanilla

zest from one organic lemon

stevia to desired sweetness

Optional “Icing”

1/2 cup coconut cream (the thick part on top of a can of coconut milk)

1/2 cup grassfed butter

a dash of stevia

a few drops of organic lemon flavour/juice

 

After they’ve cooled, keep these in the fridge in a ziplock bag or container. Serve with butter, nut butter or coconut oil. I suspect they would freeze well, although I’ve never tried.
